You Should Try These Oil Free Steamed Breakfast recipes of South India

Why breakfast plays a crucial role in our diet?  

   

Breakfast is one of the most important meal of the day. It has a huge impact in your diet. You should keep your breakfast simple and clean. At the same time, it should be nutritious and healthy because it is something that gives you energy throughout the day. Your energy levels totally depend upon what breakfast you are putting into your system.  

If you are not able to achieve your fitness goals maybe there’s an issue with your breakfast and you might need to look into it.  There is a saying that you should eat breakfast like a king, lunch like a prince and dinner like a beggar.

Most of us don’t follow this. Instead we hop on to something which can be made instantly such as processed noodles, pasta or bread for our breakfast. And regret for the entire day. If you are having processed foods such as bread & jam or noodles for your breakfast keep in mind that you are messing up with your entire digestive system.

People who consume processed foods for breakfast on regular basis have low energy levels and often feel sleepy during the entire day. In order to enhance taste, manufacturing companies add high levels of MSG aka monosodium glutamate, sugar, fat, taste enhancers and artificial colours to processed food which leads to issues such as bloating, constipation, indigestion, obesity, diabetes and heart related diseases. Thus having a nutrient rich breakfast is one of the most important aspects of a healthy living.  


Are Indian meals healthy?   

If you have a look at the Indian meals especially south Indian cuisines have a lot of healthy breakfast options to choose from. Most of the south Indian meals are made by steaming. Steaming is a natural process of cooking which involves very less or in other words you can say no oil. Steamed foods are very beneficial and have numerous health benefits. Since steamed foods involves no oil it is easy to digest and it is good for those people who have very poor or weak digestion.

Today, I will be discussing 3 oil free south Indian recipes which is made by steaming. I’m pretty sure you will love these south Indian cuisines.


3 steamed south Indian recipes (oil free)  


1 1. Idli

Idli is the staple food of south Indians for their breakfast. It is usually eaten with sambhar, and a variety of chutneys like coconut chutney and tomato chutney. Being a steamed food, it is very soft & easy to digest. Idli is made from grinded mixture of soaked rice and urad dal which is further fermented and used after 7 -8 hours. It is healthy as well as nutritious.


Serves 4


Ingredients

1. Organic rice preferably idli rice or parmal 3 cups


2. Organic white urad dal 1 cup


3. Organic Fenugreek / methi seeds 1 teaspoon


4. Cooked rice 2 teaspoon (optional)


5. Pink salt to taste


6. Organic sesame oil for greasing the idli plates ( optional)   


Method

  Soak the rice, urad dal and the fenugreek seeds for at least 4 hours in water after thoroughly washing it

 

After removing the water grind all the ingredients (rice, urad dal, fenugreek seeds and the cooked rice) to a paste in a running consistency with the water used for soaking. The consistency should be a little bit thick.  

 

Now, keep the batter aside in a vessel for about 6 -7 hours for fermentation.

 

 After fermenting it add pink salt and mix the batter  thoroughly.

 

  Now take the idli plates from the idli maker and grease it with a little bit of sesame oil and pour the batter on the plates with the needed water in the lower stand.

 

 Cook it in high flame until the steam comes out of it fully (approximately 10 mintutes). Then simmer it for another 5 minutes.

 

7  Turn off the flame, takeout the plates from the idli maker and  sprinkle a bit of water on the plates before removing the idlis.   

 

8  Now soft and fluffy idli is ready. Serve it hot with sambhar and coconut chutney.

                       

2 2.  String Hoppers or idiyappam

String hoppers or idiyappam is made from rice flour. It is made using the same idli maker. It a popular and tasty breakfast cuisine of kerala. It is served along with vegetable korma or coconut stew.


Serves 4


Ingredients

 

1.   Organic rice flour 3 cups

 

2.   Grated / desiccated coconut half cup

 

3.   Pink salt to salt

 

4.   Clarified butter (Ghee) or oil to grease (optional)


Method

 

 Put the organic rice flour on a deep bowl

 

   Knead the rice flour with hot water and pink salt into a soft dough

 

 Keep it Aside for 10 minutes.

 

  Now grease the idiyappam maker with a little bit of oil or ghee and use the mould with small holes.

 

  Keep the dough inside the mould and pile up the long strings in a greased idli plate by adding grated coconut above and below the strings.  

 

   Steam the filled idli plates for 10 -12 minutes. Then keep the flame on simmer for another 5 minutes. Remove and transfer it into a serving plate and serve it with vegetable korma or coconut stew.


3  3. Ragi Puttu

 Puttu is a dish made using rice flour, ragi flour and grated coconut. It is served with banana, boiled green moong dal, jaggery or chick peas curry. It is a delicious breakfast. The main advantage of puttu is that it can be made instantly without much effort.

 

Serves 4

 

Ingredients

 

1.   1 cup organic rice flour

 

2.   1 cup organic ragi flour

 

3.   Grated / desiccated coconut

 

4.   Pink salt to taste

 

Method

1  Mix the ragi flour and the rice flour with half a cup of salted water.

 

 Mix water until it reaches a crumb like texture i.e. when the dough is held in hand it should form a lump and when crushed it should become powdery.

 

3  Take the puttu maker, and fill the bottom pot with sufficient water & fill the above vessel with a teaspoon of grated coconut, then fill in 3 spoons of the dough, again a spoon of grated coconut then the dough and so on.

 

4  Keep it on high flame for 5 minutes and cook the puttu.      

 

5  Then simmer it for another 5 minutes

 

6   Your hot delicious puttu is ready serve it hot with banana or chickpeas curry
